Anise Hyssop

Agastache foeniculum is a beautiful aromatic species and culinary herb native to Minnesota. Because its gorgeous flowers are reminiscent of lavender, it is sometimes referenced as Lavender Hyssop, but there is no relation or similarity in aroma.

 
 
  • Anise Hyssop attracts bees, butterflies and hummingbirds, and are particularly loved by soldier beetles, a beneficial, orange-colored pollinator.

  • Anise Hyssop has a complex herbal aroma, with soft notes of mint, spice and a creamy, almost marshmallow-like anise flavor.

    It pairs well with sweet spices (cinnamon, tulsi), fruit (melon, citrus), herbs (mint, lemon balm), and florals (elderflower, red clover).

  • The leaves and flowers impart a sweet taste to tea and baked goods. It is also delicious combined with mint and sprinkled over honeydew melon.

  • Anise Hyssop smells like a blend of herbal tea, with notes of camphor and mint, sweet spices, anise, and a soft, green nuance.

    It creates an atmosphere of balance, restoration and calm.
